VEGAN STRAWBERRY POP TARTS

Ingredients:

For the pastry:

2 cups plain flour

2/3 cup vegan butter/margarine

1 tsp vanilla extract

2 tbsp sugar

3 tbsp water


For the filling:

10oz strawberries

8 tbsp white sugar

1tbsp lemon juice

2tbsp water

2tbsp corn flour

1tsp vanilla extract


For the frosting:

75g icing sugar

A few teaspoons of hot water

1 ½ tsp pink food colouring (optional)

Sprinkles to top (make sure they’re vegan)


Method:

Pastry:

  • In a large bowl, mix together the flour and sugar

  • Cube the butter and add it to the mixture, then mix thoroughly

  • Then add the vanilla and butter and mix again

  • Use your hands to form a dough

  • Wrap the dough in clingfilm and chill in the fridge for about 45 minutes


Filling:

  • Remove the tops off the strawberries and chop into small pieces

  • Put a small saucepan over medium heat and add in the strawberries, sugar and lemon juice, and bring to a light boil

  • Crush the strawberries using a potato masher

  • Reduce the heat to low add the corn flour and water and mix again

  • Simmer for 12-15 minutes until thickened, and then remove off heat


  • Dust a clean surface with flour and remove dough from fridge 5 minutes before rolling

  • Roll into a large rectangle and then cut into 12 smaller rectangles (don’t worry if they aren’t all the exact same size)

  • Place a dollop of the strawberry filling on 6 of the rectangles and then use another rectangle (one of the ones without the filling) to put on top

  • Preheat the oven to 180°

  • Use a fork to seal down the edges of the pop tarts and poke a few large holes in the top

  • Bake for 30 minutes until golden-brown

  • Allow to cool for a few hours and then drizzle your icing on top and add sprinkles (see icing method at the bottom of the page)

  • Enjoy!


Icing:

  • 75g icing sugar

  • A few teaspoons of hot water

  • 1 ½ tsp pink food colouring (optional)


  • Sift the icing sugar and add a few teaspoons of hot water until a paste is formed

  • Add the food colouring and mix again

Note: If you are putting sprinkles or decorations on top of your icing, it is crucial that you put them on straight away, or the icing will set and the sprinkles won’t stay.
