VEGAN BURGERS
Ingredients:
½ onion
2tbsp plain flour
¼ red pepper
400g chickpeas
2tbsp tomato puree
1tbsp breadcrumbs
Handful of fresh parsley leaves
Salt and Pepper, for seasoning
Oil, for cooking
Method:
Gently blitz the onion, pepper, parsley and chickpeas. The texture should be slightly thicker than hummus.
Add the tomato puree, flour, salt and pepper and breadcrumbs and stir
Shape the paste into four patties and refrigerate for an hour
Heat some oil in a frying pan and cook the patties until they’re crisp and brown on each side
Enjoy!
(Note: You can also cook these on a barbeque if you like.)
