  • ½ onion

  • 2tbsp plain flour

  • ¼ red pepper

  • 400g chickpeas

  • 2tbsp tomato puree

  • 1tbsp breadcrumbs

  • Handful of fresh parsley leaves

  • Salt and Pepper, for seasoning

  • Oil, for cooking


  • Gently blitz the onion, pepper, parsley and chickpeas. The texture should be slightly thicker than hummus.

  • Add the tomato puree, flour, salt and pepper and breadcrumbs and stir

  • Shape the paste into four patties and refrigerate for an hour

  • Heat some oil in a frying pan and cook the patties until they’re crisp and brown on each side

  • Enjoy!

(Note: You can also cook these on a barbeque if you like.)
