  • 100g dairy free butter/margarine

  • 100g self-raising flour

  • 100g golden caster sugar

  • 2 eggs

  • 1tsp vanilla extract

Makes 12

For the buttercream:

  • 150g dairy free butter/margarine

  • 300g icing sugar

  • 1tsp vanilla extract

  • 1tsp pink food colouring

  • Valentines themed sprinkles (optional)


  • Preheat the oven to 180C and fill a 12 cupcake tray with cupcake cases

  • Beat together the sugar and butter until smooth

  • Add the eggs and vanilla and mix again

  • Sift the flour and add it to the mixture, and mix until well incorporated

  • Divide the mixture between the prepared cupcake cases

  • Bake for 15 minutes and check a skewer inserted in the middle comes out clean

To make the buttercream:

  • Whisk together the butter and icing sugar with an electric mixer until smooth

  • Add the vanilla and food colouring and mix again

  • Allow the cupcake to cool before piping or spreading on the icing

  • Enjoy!
