VALENTINES DAY CUPCAKES
Ingredients:
100g dairy free butter/margarine
100g self-raising flour
100g golden caster sugar
2 eggs
1tsp vanilla extract
Makes 12
For the buttercream:
150g dairy free butter/margarine
300g icing sugar
1tsp vanilla extract
1tsp pink food colouring
Valentines themed sprinkles (optional)
Method:
Preheat the oven to 180C and fill a 12 cupcake tray with cupcake cases
Beat together the sugar and butter until smooth
Add the eggs and vanilla and mix again
Sift the flour and add it to the mixture, and mix until well incorporated
Divide the mixture between the prepared cupcake cases
Bake for 15 minutes and check a skewer inserted in the middle comes out clean
To make the buttercream:
Whisk together the butter and icing sugar with an electric mixer until smooth
Add the vanilla and food colouring and mix again
Allow the cupcake to cool before piping or spreading on the icing
