DAIRY FREE VALENTINES DAY COOKIES
Ingredients:
225g dairy free butter/margarine
100g golden caster sugar
275g plain flour
2tsp cinnamon
For the icing:
75g icing sugar
A few teaspoons of hot water
1 teaspoon vanilla extract (optional)
Method:
Preheat the oven to 180C
Cream the butter and sugar together until soft
Add the sugar and continue to mix until fluffy
Sift the flour and add it to the mixture along with the cinnamon
Use your hands to form the mixture into a dough
Roll the dough and use a heart-shape cookie cutter to cut out hearts
Place on a baking tray, making sure they are a few centimeters apart
Bake in the oven for about 10-15 minutes until golden brown
Leave to call before icing
To make the icing:
Sift the icing sugar and add a few teaspoons of hot water until a paste is formed
Add the vanilla and mix again
Drizzle icing on cookies

(Note: If you want to make your icing a different colour, simply add a teaspoon of your chosen food colouring and add it with the vanilla.)
(Note: If you are putting sprinkles or decorations on top of your icing, it is crucial that you put them on straight away, or the icing will set and the sprinkles won’t stay.)
