QUICK DAIRY FREE THAI GREEN CHICKEN CURRY
Ingredients:
200ml carton coconut cream
2 chicken breasts
3tbsp Thai green curry paste
1tbsp runny honey
Juice of 1 lime
Handful fresh coriander
¼ green pepper
¼ red pepper
Method:
Pour the coconut cream into a saucepan. Add the curry paste, runny honey and lime juice and mix well.
Chop the chicken into bite size pieces.
Add the chicken and pepper, toss well and set aside for a few minutes.
Place the saucepan on the hob and gently simmer for 12-15 minutes, until the chicken is cooked through and the sauce has thickened slightly. Add the coriander.
Garnish with extra coriander, and serve with cooked basmati rice if you like.
