QUICK DAIRY FREE THAI GREEN CHICKEN CURRY

Ingredients:

  • 200ml carton coconut cream

  • 2 chicken breasts

  • 3tbsp Thai green curry paste

  • 1tbsp runny honey

  • Juice of 1 lime

  • Handful fresh coriander

  • ¼ green pepper

  • ¼ red pepper


Method:

  • Pour the coconut cream into a saucepan. Add the curry paste, runny honey and lime juice and mix well.

  • Chop the chicken into bite size pieces.

  • Add the chicken and pepper, toss well and set aside for a few minutes.

  • Place the saucepan on the hob and gently simmer for 12-15 minutes, until the chicken is cooked through and the sauce has thickened slightly. Add the coriander.

  • Garnish with extra coriander, and serve with cooked basmati rice if you like.
