DAIRY AND GLUTEN FREE SHORTBREAD
Ingredients:
125g dairy-free margarine
50g caster sugar
1 teaspoon vanilla extract
140g gluten-free plain flour
2 tablespoons ground rice or rice flour
Method:
Preheat the oven to 170°
Cream together margarine, vanilla and sugar until pale and fluffy
Mix together the flours and then add the creamed mixture. Stir until combined.
Turn out onto lightly floured surface and knead dough. Press into a lined baking tin and cut into squares or use cookie cutters to cut into shapes.
Bake in oven for 35-40 minutes, the colour should be pale golden
Remove from oven and re-cut squares whilst hot. Cool in tin. Dust with icing sugar before serving.
