DAIRY AND GLUTEN FREE SHORTBREAD

Ingredients:

  • 125g dairy-free margarine

  • 50g caster sugar

  • 1 teaspoon vanilla extract

  • 140g gluten-free plain flour

  • 2 tablespoons ground rice or rice flour

Method:

  • Preheat the oven to 170°

  • Cream together margarine, vanilla and sugar until pale and fluffy

  • Mix together the flours and then add the creamed mixture. Stir until combined.

  • Turn out onto lightly floured surface and knead dough. Press into a lined baking tin and cut into squares or use cookie cutters to cut into shapes.

  • Bake in oven for 35-40 minutes, the colour should be pale golden

  • Remove from oven and re-cut squares whilst hot. Cool in tin. Dust with icing sugar before serving.
