  • 100g dairy free butter/margarine

  • 100g golden caster sugar

  • 2 eggs

  • 100g self-raising flour

  • 1 tsp vanilla extract

For the icing:

  • 75g icing sugar

  • A few teaspoons of hot water

  • 1 teaspoon vanilla extract (optional)

(Note: If you want to make your icing a different colour, simply add a teaspoon of your chosen food colouring and add it with the vanilla.)


  • Preheat the oven to 180

  • Cream the butter and sugar together in a large bowl until well incorporated

  • Add the eggs, flour and vanilla and mix again

  • Divide the mixture evenly between 12 fairy cake cases and bake for 20 minutes until a skewer/toothpick comes out clean

  • Leave to cool and add the icing if you want

  • Enjoy!

To make the icing:

  1. Sift the icing sugar and add a few teaspoons of hot water until a paste is formed

  2. Add the vanilla and mix again

(Note: If you are putting sprinkles or decorations on top of your icing, it is crucial that you put them on straight away, or the icing will set and the sprinkles won’t stay.)
