CRÊPE-STYLE DAIRY FREE PANCAKES


Ingredients:

  • 130g plain flour

  • 1 egg

  • 300ml dairy free milk ( I use oat)

  • 1 teaspoon cinnamon (optional)

  • Vegetable oil, for cooking


  • Pour the flour into a bowl (Note: you don’t need to sieve it). Make a well in the centre and crack the egg in the middle


  •  Whisk and add half the milk


  • Whisk again and add the other half


  • Add the cinnamon and whisk thoroughly

  •  Heat a small frying pan and pour a splash of vegetable oil. Rotate the pan in circles so the oil spreads out


  • Pour about 1 ½ - 2 ladles of mixture in the middle and swirl around to get a nice round shape (Note: If this is your first time making this type of pancakes, don’t worry if you don’t get the perfect shape, my first attempts resembled octopuses!)


  •  Allow the first side to cook for 1-2 minutes until golden brown and then turn using a spatula.


  •  Cook the second side for about 1 minute and place in a plate to cool before serving


  • Repeat until you use all the mixture

  •  Enjoy!
