DAIRY FREE CHOCOLATE MOUSSE

Ingredients:

  • 150g dark chocolate (or an alternative dairy free chocolate)

  • 6 egg whites

  • 3tbsp golden caster sugar


Method:

  • In a microwavable bowl, melt the chocolate and stir until completely melted

  • Whisk the egg whites to soft peaks, scatter in the sugar and whisk again until the mixture forms stiff peaks when you lift the whisk out

  • Add a big tablespoon of the egg white to the melted chocolate and mix thoroughly, working fast so the chocolate doesn’t cool and harden. Then fold in the remaining egg whites carefully using a spatula or a large metal spoon.

  • Pour into serving glasses and refrigerate for a couple of hours before serving

  • Enjoy!
