DAIRY FREE CARROT AND CORIANDER SOUP

Ingredients:

  • 500g carrots

  • 750ml water

  • 1 vegetable stock cube

  • 1 onion

  • 1 tbsp olive oil

  • 1 tsp ground coriander

  • Handful of fresh coriander

  • 1 garlic clove

  • 150ml coconut cream

  • Salt and pepper


Method:

  • Peel and chop onion and garlic

  • Wash and chop carrots

  • Heat the oil in a large pan, add the onion, fry for 5 mins until softened

  • Stir in the ground coriander and cook for 1 minute.

  • Add the carrots and stock cube and water, bring to the boil, then reduce the heat.

  • Cover and cook for 20 mins until the carrots are tender.

  • Add the fresh coriander.

  • Use a stick bender to blitz until smooth

  • Add salt and pepper and cream

  • Enjoy!
