DAIRY FREE CARROT AND CORIANDER SOUP
Ingredients:
500g carrots
750ml water
1 vegetable stock cube
1 onion
1 tbsp olive oil
1 tsp ground coriander
Handful of fresh coriander
1 garlic clove
150ml coconut cream
Salt and pepper
Method:
Peel and chop onion and garlic
Wash and chop carrots
Heat the oil in a large pan, add the onion, fry for 5 mins until softened
Stir in the ground coriander and cook for 1 minute.
Add the carrots and stock cube and water, bring to the boil, then reduce the heat.
Cover and cook for 20 mins until the carrots are tender.
Add the fresh coriander.
Use a stick bender to blitz until smooth
Add salt and pepper and cream
Enjoy!
