HEALTHY VEGAN PASTA

Ingredients:

  • Splash of olive oil

  • 1tbsp dairy free butter/margarine

  • 2 cups tomato passata

  • 1/3 cup vegan parmesan

  • ½ cup vegan double cream

  • 1tbsp vegan crème fresh

  • Pasta seasoning of choice

  • Handful of spinach

  • 300g spaghetti or other pasta of choice

  • Salt and pepper, to taste

  • Vegan parmesan, to taste


Method:


  • Add olive oil and butter to a pan on low heat

  • Allow the butter to melt before adding passata and double cream

  • Pour in cheese and crème fresh and mix

  • Combine with pasta seasoning of choice (I used herbs)

  • Add in handful of spinach and 300g cooked spaghetti and mix thoroughly

  • Take pan off heat and serve (serves approx 4 people)

  • Top with more parmesan + salt and pepper

  • Enjoy!
