HEALTHY VEGAN PASTA
Ingredients:
Splash of olive oil
1tbsp dairy free butter/margarine
2 cups tomato passata
1/3 cup vegan parmesan
½ cup vegan double cream
1tbsp vegan crème fresh
Pasta seasoning of choice
Handful of spinach
300g spaghetti or other pasta of choice
Salt and pepper, to taste
Vegan parmesan, to taste
Method:
Add olive oil and butter to a pan on low heat
Allow the butter to melt before adding passata and double cream
Pour in cheese and crème fresh and mix
Combine with pasta seasoning of choice (I used herbs)
Add in handful of spinach and 300g cooked spaghetti and mix thoroughly
Take pan off heat and serve (serves approx 4 people)
Top with more parmesan + salt and pepper
Enjoy!
