DAIRY FREE SCHOOL CAKE

Ingredients:

  • 250g self raising flour

  • 250g caster sugar

  • 250g dairy free butter/margarine

  • 4 eggs

  • 1tbsp vanilla bean paste


For the icing:

  • 250g icing sugar

  • 3tbsp boiling water

  • Sprinkles, to decorate


Method:

  • Preheat the oven to 160C

  • Mix the flour, sugar and butter

  • Add the eggs and vanilla and mix again

  • Pour into a greased baking tin and bake for 25 minutes


To make the icing:

  • Mix together the icing sugar and water and spread onto the cake once cooled

  • Immediately top with sprinkles

  • Enjoy!
