DAIRY FREE BANANA CAKE
Ingredients:
175g self-raising flour, sifted
150g soft light brown sugar
2 eggs, beaten
2 bananas, mashed
½ tsp baking powder
150ml vegetable oil/sunflower oil/rapeseed oil
(optional) 1 tbsp cinnamon
For the icing:
Orange or lemon zest
75g icing sugar
A few teaspoons of hot water
Method:
Preheat the oven to 180°C
Weigh and measure out your ingredients. Remember to sift the flour and beat the eggs.
Mash the banana with a fork until it’s a thick consistency
Add all the dry ingredients and mix
Next add in all the wet ingredients, but not the banana. Mix again.
Finally add in the bananas, stir, then place in baking tray and bake in oven for about 20-30 minutes, until a skewer comes out clean. Decorate with icing if you want.

How to make the icing:
Sift the icing sugar and add a few teaspoons of hot water until a paste is formed. Pour onto your banana bread. Then grate orange zest and sprinkle on top.
