  • 175g self-raising flour, sifted

  • 150g soft light brown sugar

  • 2 eggs, beaten

  • 2 bananas, mashed

  • ½ tsp baking powder

  • 150ml vegetable oil/sunflower oil/rapeseed oil

  • (optional) 1 tbsp cinnamon

For the icing:

  • Orange or lemon zest

  • 75g icing sugar

  • A few teaspoons of hot water


  • Preheat the oven to 180°C

  • Weigh and measure out your ingredients. Remember to sift the flour and beat the eggs.

  • Mash the banana with a fork until it’s a thick consistency

  • Add all the dry ingredients and mix

  • Next add in all the wet ingredients, but not the banana. Mix again.

  • Finally add in the bananas, stir, then place in baking tray and bake in oven for about 20-30 minutes, until a skewer comes out clean. Decorate with icing if you want.

  • Enjoy!

How to make the icing:

  • Sift the icing sugar and add a few teaspoons of hot water until a paste is formed. Pour onto your banana bread. Then grate orange zest and sprinkle on top.
