  • 200g self-raising flour

  • 1 tsp baking powder

  • 3 eggs

  • 200ml oat or almond milk

  • 20g  dairy free butter/margarine (melted) + extra for frying

  • 1 tsp vanilla extract (optional)

  • 1 ½ tbsps cinnamon  (optional)

  • Vegetable oil (for cooking)


  • Mix your ingredients thoroughly with a spoon until you get a thick, cake-like mixture.

  • Heat a large frying pan on low heat and leave to warm for 2-3 minutes. ( If you put your hand about 30cm above the pan, and you can feel warmth, your pan has heated)

  • Pour some vegetable oil and a teaspoon of butter in the pan, turning the pan slowly to spread it out.

  • Pour the mixture into a jug and pour a little in by the edge of the pan. You should be able to fit three pancakes in.

  • Cook them for 2-3 minutes on each side, until they are a nice golden colour.

  • Enjoy!
