AMERICAN-STYLE FLUFFY PANCAKES

Ingredients:
200g self-raising flour
1 tsp baking powder
3 eggs
200ml oat or almond milk
20g dairy free butter/margarine (melted) + extra for frying
1 tsp vanilla extract (optional)
1 ½ tbsps cinnamon (optional)
Vegetable oil (for cooking)
Method
Mix your ingredients thoroughly with a spoon until you get a thick, cake-like mixture.
Heat a large frying pan on low heat and leave to warm for 2-3 minutes. ( If you put your hand about 30cm above the pan, and you can feel warmth, your pan has heated)
Pour some vegetable oil and a teaspoon of butter in the pan, turning the pan slowly to spread it out.
Pour the mixture into a jug and pour a little in by the edge of the pan. You should be able to fit three pancakes in.
Cook them for 2-3 minutes on each side, until they are a nice golden colour.
